The Wine
Credit where it is due to the Chianti Classico, a Queen among wines!
Not all that is produced in Chianti is Chianti Classico. In order to deserve this denomination it is not enough to just come from the region, all production regulations must be strictly observed. These regulations can be traced back to 1984, when the Chianti Classico was considered a sub-denomination of the wider reaching OCG Chianti label. In 1996 Chianti Classico came into its own as a very important label: with the Ministerial Decree of 5 August, the DOCG Chianti Classico was recognized as an independent denomination. Modifications made in 2002 brought about new regulations for the product and for the denomination.
Besides the alcoholic strength, Chianti Classico must have very specific characteristics:
- a bright ruby colour that becomes pomegranate red with age
- Vinous scent, with a violet perfume and characterised by a marked finesse when aging
- Harmonious taste, dry, pleasant to the palate, lightly tannic, becomes refined over time to a velvety texture
- Maximum sugar of 4 gr./l of reduced sugars
- Net minimum dry extract 23%
- Total minimum acidity 4.5%
